This is a redneck twist on a comfort food classic, combining smoky BBQ flavors with crispy tots.

Ingredients (Serves 6):

  • 1 lb ground beef or pulled pork
  • 1 onion, diced
  • 1 can (15 oz) baked beans
  • 1 cup BBQ sauce
  • 2 cups shredded cheddar cheese
  • 1 bag (32 oz) frozen tater tots
  • Salt and pepper to taste
  • 1 tsp garlic powder
  • Optional: diced jalapeรฑos for spice

Instructions:

  1. Preheat oven to 375ยฐF.
  2. Brown ground beef or heat pulled pork with diced onion in a skillet. Season with salt, pepper, and garlic powder. Drain excess grease if using beef.
  3. Mix in baked beans and BBQ sauce. Spread the mixture in a greased 9×13 baking dish.
  4. Sprinkle 1 cup of cheese over the meat mixture. Arrange tater tots in a single layer on top.
  5. Bake for 30-35 minutes until tots are golden. Sprinkle remaining cheese (and jalapeรฑos, if using) on top and bake 5 more minutes until cheese melts.
  6. Serve hot with a side of coleslaw or pickles.

Tip: Swap pulled pork for leftover brisket if youโ€™ve got it.
