This is a redneck twist on a comfort food classic, combining smoky BBQ flavors with crispy tots.
Ingredients (Serves 6):
- 1 lb ground beef or pulled pork
- 1 onion, diced
- 1 can (15 oz) baked beans
- 1 cup BBQ sauce
- 2 cups shredded cheddar cheese
- 1 bag (32 oz) frozen tater tots
- Salt and pepper to taste
- 1 tsp garlic powder
- Optional: diced jalapeรฑos for spice
Instructions:
- Preheat oven to 375ยฐF.
- Brown ground beef or heat pulled pork with diced onion in a skillet. Season with salt, pepper, and garlic powder. Drain excess grease if using beef.
- Mix in baked beans and BBQ sauce. Spread the mixture in a greased 9×13 baking dish.
- Sprinkle 1 cup of cheese over the meat mixture. Arrange tater tots in a single layer on top.
- Bake for 30-35 minutes until tots are golden. Sprinkle remaining cheese (and jalapeรฑos, if using) on top and bake 5 more minutes until cheese melts.
- Serve hot with a side of coleslaw or pickles.
Tip: Swap pulled pork for leftover brisket if youโve got it.
